Ghee vs Butter: What Is the Difference and When to Use Each
How ghee and butter differ in taste, cooking and storage, and which one suits which dish.
What they are
Butter is churned from milk or cream and still contains some milk solids and water. Ghee is butter that has been cooked slowly until the water is gone and the milk solids are strained out, leaving clarified fat.
In the kitchen
Ghee has a rich, nutty aroma and handles higher heat, so it suits tempering, frying and rice dishes like ven pongal and sweets. Butter is softer and melts quickly, which makes it good for spreading and baking.
Storing them
Keep ghee in a cool, dry place with the lid closed. Butter is more perishable and should be kept refrigerated as the pack instructs.
